It’s hotter than ever out there and we’re craving cool refreshments to style out balmy summer evenings in the garden. Here’s our current favourite – a gin-based sundowner that has enough ingredients to warrant cocktail status, but is so easy to make you’ll be serving it in your sleep. 5 mint leaves, bruised
30ml gin
2 tsp elderflower cordial
2 tsp lemon juice
large handful of ice
cloudy apple juice, for topping up
1 long strip of cucumber, peeled using a vegetable peeler
Mix the mint leaves, elderflower cordial, gin and lemon juice together in the bottom of a tall glass using a long-handled spoon.
Add a large handful of ice, then top up with the apple juice. Stir well, and drop a strip of cucumber in the glass before serving.
Sit back, take a sip, watch the sunset.
